I have to say, I’ve been on a boat, sorry – yaucht – only a few times – she was a 29ft racing yaucht, I went from Littlehampton to The Isle of Wight. I did the tie and un-tie thing – I’ve never seen anything so convoluted . The tying thing is just something that fishermen do to pass their time?
There are different knots for different requirements, and a knot that is ease to tie (and tie correctly) is a requirement sure, but for example a knot with more loops can be easier to untie after the knot has been put under heavy load.
Knowing how a knot might fail or come loose is another issue. You would use a very different knot for a fixed weight compared to something on a boat that might be moving back and forth with the current.
And as you say sometimes people like to make the knot complicated because they can.
