When looked at in the context of the whole series you can see why only some are included in these graphics. All flags, including some that don’t actually represent countries e.g. Texas, EU, are included somewhere. However, not including the union flag in the timeline of flags was a glaring omission IMO

What are you talking about?
None of those above are timelines. they are specifically about common/dominating forms & colours.
The Union flag is not one of many similar so it doesn’t count as one of the most dominant form.
On the website, they actually do have a timeline of national flags & they do indeed include both the UK & US flags.

I’d be a bit too nervous to try to see that in person but I love the idea.
I found that rather soothing. Plus, flags are seriously underrated.
Nepalese flag, I believe is only non-rectangular flag.
