      gold papered kerrygold or avonmore…
      one of the few proper unmolested grassfed left afaik (outside the small handmade artisan stuff)

      such a humble but crucial ingredient!

        ok recipe time:
        best grilled cheese + tomato sandwich

        2x slices batch bread buttered (using per above standard butter)
        Red Leicester cheese, grated
        2/3 vine cherry tomatoes , thinly sliced as your knife allows (the medium darker ones if u can them find not those virtually pink coloured acidy bullet ones)

        assemble the sandwich with bread facing buttered side out

        get a dry frying pan ready on medium heat to get it going then turn down low heat

        place assembled sandwich on pan, 3-5 mins each side but do not touch adjust or fiddle with it on the pan (you want the butter to slowly burn/caramelise & the salt to come along out and the cheese to melt inside nicely uninterrupted)

        out onto a serving plate and wait another couple mins or you’ll burn the face off yourself and not taste it properly

      …you wont be winning many quizzes when the brexit kicks in and the Spanish expel the brits and retake gibraltar
