A warm Summer salad for FOUR?
Bollox Never..
YES according to fresh new blogger The Irish Food Dude.
He writes:
This rough & ready salad is delicious, easy to make & relatively healthy! I cooked two medium sized steaks for four people, cut them up and threw them on top. It’s a good way to cut back on the red meat without depriving yourself. Swapping steak for chicken or tuna steak is another delicious way to mix it up!
The Cast
-2 medium sized steaks of your choice
-Garlic & 2 Red Onions
-Vine Tomatoes
-Leaves (I like rocket and purple winter leaves)
-Buffalo Mozzarella
-Large Asparagus blades
-Lemon Juice, Balsamic Vinegar, Olive Oil, Sea SaltThe Script:
Crush a few cloves of garlic and throw them in a roasting tin with the vine tomatoes & roughly chopped red onion. Add olive oil and sea salt. Put it on a highish heat and let them crisp up. Add some balsamic vinegar for some extra flavour while the onions caramelise.
Blanch the asparagus in some boiling water for about 2-3 minutes. Add some lemon juice, salt and black pepper to them in a bowl. Throw the asparagus blades on the BBQ and cook the steaks. (I will do a post soon about how I like to get a perfect steak on the BBQ!)Show Time:
When everything is cooked, assemble the salad to your liking. Slice the Mozzarella into pieces, douse your leaves in a nice vinaigrette dressing and add the rest on top…”

The food dude would like YOU to recommend a suitable wine to accompany the above. Anyone?
