Well it does raise some interesting questions- are you compelled to remain there by law? Either way it is not up to hotel staff to imprison someone against their will- that would be a matter for the Guards.
Are you compelled to pay the two grand a week? That seems stiff for such basic rations. He also mentioned that 6 people committed suicide – was that people in the hotel?
It’s worth noting that it was German tourists who took legal action for something similar in Portugal, which forced the courts to rule that PCR tests were not fit for purpose of course.

Once again partial/misinformation from you. One of the key criticisms in the Portugal were not administered by a medical professional and there was no second test to confirm the results. There are teams of medical professionals at all Irish quarantine hotels to deal with any suspected case.

An appeals court in Portugal has ruled that the PCR process is not a reliable test for Sars-Cov-2, and therefore any enforced quarantine based on those test results is unlawful.
Further, the ruling suggested that any forced quarantine applied to healthy people could be a violation of their fundamental right to liberty.
Most importantly, the judges ruled that a single positive PCR test cannot be used as an effective diagnosis of infection.
Subject to subsection (4) and any regulations made under section 38G(1)(g)(ii) and (iii), an applicable traveller shall quarantine at a designated facility and shall remain in quarantine at that facility in accordance with this Act
and later there is some detail on offences:

(d) while in a designated facility acts in a manner which endangers the life and health of any other person in the facility or acts with reckless disregard for the life and health of such a person,
(e) leaves a designated facility—
(i) for a purpose other than one specified in subsection (19) of section 38B, or
(ii) for a purpose referred to in that subsection for a period longer than that which is strictly necessary for the purpose,
or
(f) refuses to take a RT-PCR test in contravention of the requirements of section 38B(22)
